B A S I C C H I C K E N S O U P

The vegetables included here, as well as the optional ones listed,

make up what are known as pot vegetables or soup greens.

FOR THE SOUP

One 5-to 6-pound fowl, or 7 to 8 lbs. of broilers, with neck and all giblets except liver

10 to cups water, as needed

2 medium carrots, scraped and quartered

2 or 3 celery stalks with leaves,

whole or cut in half

1 medium yellow onion,

whole or cut in half, peeled or unpeeled

3 parsley sprigs,

preferably the flat Italian type

8 to 10 black peppercorns

2 to 3 teaspoons coarse salt , or 1 to 2

teaspoons table salt or to taste

FOR THE OPTIONAL GARNISH

Chopped fresh parsley and/or dill

SERVES FOUR TO SIX AS MAIN COURSE

PREPARATION

Clean, trim , and singe chicken. Quarter the chicken if necessary;

Place quartered chicken in a close-fitting 5 quart soup pot. A whole

chicken should fit into a 6- to 7-quart pot. Add 10 cups water if you

use broilers or 12 if you use a fowl. Water should cover chicken.

Cover pot and bring to a boil. Reduce to a slow simmer and skim

foam as it rises to the surface. Soup should cook at a smile, a low

simmer that produces a sort of trembly, faint rippling just

below the surface.

When foam subsides, add all remaining ingredients with only 1 teaspoon

of salt. Cook chicken until it is loosening from the bone. If the chicken

is quartered, allow about 1-1/4 hours for cooking broilers and 2-1/2

to 3 hours for a fowl. Add more water during cooking if chicken is

not seven-eighths covered. Turn chicken 2 or 3 times during cooking.

Add salt gradually, tasting as the soup progresses.

Remove chicken, giblets, and bones and set aside. Pour soup through

a sieve, rinse pot and then return soup to pot if it is to be served

immediately. Skim fat from surface if it is to be served without being

stored.

Soup can be prepared in advance up to this point. If you are going to

store the soup, strain it over a bowl but do not skim. Cool thoroughly,

uncovered, then cover and place in a refrigerator. Store wrapped chicken

separately in the refrigerator. Discard (or nibble on) giblets, bone, and

soup vegetables.

Chicken can be reheated in soup, either in quarters with bones and skins

for a lusty dish or trimmed of bones and skin and cut into smaller easily

spooned pieces.

Sprinklings of chopped parsley and/or dill are lovely garnishes.

Mimi Sheraton was born into a food-loving family in Brooklyn.

Her mother was an excellent cook and her father was a commission

merchant in the Washington Market, a wholesale produce market.

Growing up she was surrounded by talk of good food and cooking,

where to find the best fruits and vegetables and how

to recognize them. Though food was always her love and her hobby

it did not immediately become her vocation.

At the NYU School of Commerce she majored in marketing

and minored in journalism, graduating to find work writing

home furnishings copy at an advertising agency. She continued writing

about home furnishings at Good Housekeeping magazine until

she attended the New York School of Interior Design

and became a certified professional decorator,

eventually becoming homefurnishings editor of Seventeen magazine.

It was at Seventeen magazine that Mimi's lifelong interest in food

began to blossom. While traveling for her duties as an editor

she researched furniture designers, china and silver factories,

but for herself she researched food. She went to restaurants and markets

all over the world, taking photographs, tasting everything, and returning

to the States with specialized cooking and serving utensils,

and cookbooks. At the time she was sharing an office with

the food editor, and she soon began to experiment in the adjoining

test kitchen. Not long after that Mimi became

the new Seventeen magazine food editor.

She continued to write about food when she moved to House Beautiful

as the managing editor of their supplements division.

Succumbing wholeheartedly to her passion for food, Mimi spent

the next twenty years traveling the world and free-lancing.

As a freelancer she produced food and design themed exhibitions

for the Hallmark Gallery such as "Bread & Wine," "Celebrations,"

"Design: Italian Style," "American Needlework, Past & Present,"

and "Antique Tools." Mimi did menu research for Restaurant Associates

when they were designing the Four Seasons and Zum Zum.

She also developed patient and coffee shop menus and recipes at NYU

Hospital and served as a consultant to Georg Jensen.

In 1960 Mimi gathered folk art for Jensen's, did food research

for Restaurant Associates and traveled around the world in

four and a half months to write "City Portraits," a guide

to sixty cities, all in one trip.

Mimi has taken cooking courses at the China Institute in New York,

at Le Cordon Bleu in Paris and studied with private teachers

in Copenhagen, Beirut, Phnom Penh and Istanbul. Her columns about food

have been published in many magazines, including Town & Country,

The Village Voice, Eros, Esquire, Mademoiselle and Coronet.

In December of 1975, Mimi became the food critic at the New York Times,

where she remained for eight years.

Upon leaving the Times in 1983, Mimi went on to serve as a food critic

and reporter for Time magazine, spending three weeks in China to do

a major report on food. For Conde Nast Traveler she flew "business class"

around the world to report on the food of 11 different airlines,

and traveled around the United States for one year to find candidates

for the annual Distinguished Restaurant Award that the Traveler

gives to 50 U.S. restaurants each year.

Since that time Mimi has also written for Harper's Bazaar, Vogue,

Audubon, The New York Times Magazine, The Sophisticated Traveler

and Smart Money.

She has lectured on food criticism at Cornell's Hotel

and Restaurant School and at the Culinary Institute of

America in St. Helena, California.

For her work in New York magazine Mimi won a Penney-Missouri Journalism

prize and has won a Front Page Award for her work in the New York Times.

Most recently Mimi has been a monthly contributor to New Woman

magazine while working on a book about the great food markets

of the world for Harry N. Abrams. She is also writing

"An Oral History of the Bialy," and is curating an exhibition

on Food and Fashion for the Fashion Institute of Technology

that is planned for the fall of 1997.

Mimi Sheraton still resides in Greenwich Village as she has for the past 50

years, where she tends her garden and lives with her husband

Richard Falcone. She has one son, Marc Falcone

Distributed Sun LLC (D-SUN), a DC-based solar project developer, owner and operator, announced today it has signed a 20 year, 1.1 Megawatt power-purchase-agreement (PPA) to generate solar electricity for the Sheraton Meadowlands Hotel & Conference Center. In the first of several Megawatt-scale, commercial solar projects to be commissioned in 2011, D-SUN will construct and operate a solar powered carport facility in partnership with The Buccini/Pollin Group (BPG), the owner of the property, and Pollin/Miller Hospitality Strategies, Inc. (PMHS), the property manager. The solar system will be owned by Distributed Sun's Solar Energy Investment Company (SEIC), sunTWO, and combines clean, on-site power with architectural-grade, shaded parking and green power savings, generating over 1.2 Gigawatt hours of electric power per year, and more than 40 Gigawatt hours over its lifetime.

"We are very excited to expand our partnership with The Buccini/Pollin Group," says Jeff Weiss, Managing Director of Distributed Sun's SEICs. "This project marks another milestone in the relationship, demonstrates the company's long-term view with -- and commitment to -- our trusted real-estate partners, and further proves the unique benefits of our replicable and scalable business model."

D-SUN's solar services to BPG and PMHS are widely considered to be much better for the environment than conventional energy -- offsetting an estimated 75 million pounds of CO2, or the equivalent of removing more than 6,500 cars from the road. Solar power from D-SUN also costs the Sheraton less per kilowatt hour generated than the electricity it buys from the grid, and under contract terms that guarantee savings for PMHS will grow each year, compounding for 20 years.

"We have made clear our commitment to having the cleanest, most energy efficient, and most efficiently run properties in our industry," says Dave Pollin. "The partnership between PMHS and Distributed Sun at the Hilton BWI Airport, the Sheraton Meadowlands, and elsewhere reaffirms this promise to green our portfolio with best-practice solutions and partners that improve our bottom-line."

As part of the agreement, Distributed Sun has agreed to a capital investment for renovation to the hotel parking lot. In return, the PPA rate schedule adjusts the price per kWh paid on-site until the additional expense is recovered for sunTWO -- at a reasonable capital cost to both partners. Even with this incremental cost, the rate schedule can provide the Sheraton solar electricity savings versus the conventional alternative even before this cost is recovered. "Pioneers and leaders in the commercial real-estate industry like Dave Pollin and Chris Buccini recognize that on-site renewable electricity is a game-changer," offers Chase Weir, CEO of D-SUN. "Combining capital improvements and increased property values with electricity savings on the one hand, and solar investment returns and a cleaner environment on the other, is a powerful and motivating combination for us and our partners."

Last year the Konica Minolta Big City Classic broke the attendance record for a regular season, lacrosse-only event with 25,742 fans at the state-of-the-art New Meadowlands Stadium.

The schedule for the third edition of the Konica Minolta Big City Classic has been set. Big East neighbors Rutgers and St. John's will face off in the first game at 1:00 p.m EST. The fifth race of the 2010 Red Bull Air Race World Championship season will be held, in partnership with NYC & Company, Jersey City, NJ and Liberty State Park, over the Hudson River on June 19 and 20. This year marks the sixth year of the Red Bull Air Race World Championship which will also land in nine cities including Abu Dhabi, UAE; Perth, Australia, and Lisbon, Portugal.

“New York City is known for its ability to draw some of the world’s greatest, large-scale events each year, and we’re always happy to welcome new and exciting sporting events that amplify its reputation as one of the most electrifying cities in the world,” said NYC & Company CEO George Fertitta. “The Red Bull Air Race World Championship will, without a doubt, bring a new element of adventure to this city, and add to the incredible roster of events taking place here in 2010.”

In 2009, the Red Bull Air Race was broadcast in over 180 countries reaching over 300 million viewers. The teams current home, Giants Stadium, opened in 1976, but the Jets have long felt like a second-class tenant there since arriving in 1984. The louvers in the new stadium, which are arranged in various densities, may also reflect the teams colors.Although construction has been going on at the site north and east of Giants Stadium since April, groundbreaking on the $1.3 billion stadium will take place today, with officials from both teams; the N.F.L., including Commissioner Roger Goodell; and the state expected to attend.It is the newest local sports project after decades without construction: the Devils Newark arena will open next month; the Mets and the Yankees are building ballparks that are expected to open in 2009; construction of the Red Bulls stadium is underway in Harrison, N.J.; and the Nets still anticipate building an arena near downtown Brooklyn.Since Giants Stadium opened, 22 stadiums have opened in the N.F.L., including the new Soldier Field, which involved building a new stadium inside the exterior of the old one. It's still a year off, but the US Naval Academy announced this week that the 2010 Navy vs. Notre Dame Football game will be played at the New Meadowlands Stadium, home to the Jets and Giants starting after the upcoming 2009 season.

Jets President and CEO Woody Johnson said he is "thrilled that Navy and Notre Dame will be playing their annual game in our new stadium when it opens next year,” and that the new stadium was designed to not only "be our new home but also to bring a variety of spectacular events, including high profile college football matchups..."This is just the first of what we expect to be many announcements of non-NFL events at the stadium and it's a good thing too. The concerts will sell out at Giants Stadium, but old facilities and poor sound turn many would be attendees off. Hopefully that will change in 2010.

Izod Center is the third name given to the Meadowlands sports and entertainment arena.
The facility opened on July 2, 1981, as Brendan Byrne Arena, after the former Democratic governor. Rocker Bruce Springsteen was the performer, playing the first of six sold-out concerts.
The arena, which opened five years after The Meadowlands Racetrack and Giants Stadium, cost $85 million to build.
Its first major sports tenant was the Nets, who have played at the arena since moving from the Rutgers Athletic Center in the fall of 1981.
The Devils moved in a year later, arriving from Colorado. The Devils played at the arena until last year, when the franchise moved to Newark's Prudential Center.
Seton Hall University, which began playing basketball at the Meadowlands in 1985, also moved to Newark last year.
The arena was renamed Continental Airlines Arena in January 1996, with a naming-rights deal worth a reported $29 million during a span of 12 years.
Last October, the Izod brand of the Phillips-Van Heusen company replaced Continental with a five-year, $7 million deal.
Other past pro sports tenants at the Meadowlands arena include:
* Major Indoor Soccer League's Rockets (1981-82)
* Cosmos, North American Soccer League, in 1981-82 and 1983-84; and Major Indoor Soccer League, 1984-85

Lady Liberty's Crown May Reopen to Public

The National Park Service is considering reopening the Statue of Liberty’s crown, which has been closed since the Sept. 11 terrorist attacks.

The National Park Service has requested bids to safely open the Statue of Liberty's iconic headpiece to the public, according to documents released by U.S. Rep. Anthony Weiner, D-N.Y.Liberty Island was closed after the terrorist attacks. The statue's base, pedestal and lower observation deck reopened in August 2004, after a $20 million effort to enhance fire safety.But the crown and its interior observation deck, which soar 265 feet above New York Harbor, remained closed because the park service said there was no way to evacuate them safely in an emergency. The narrow spiral staircase that leads up to the crown doesn't comply with fire and building codes.Visitors are now limited to the statue's 154-foot-tall pedestal.Weiner, a member of the House Judiciary Subcommittee on Crime, Terrorism and Homeland Security, helped arrange a Congressional hearing in September on reopening the crown.He said keeping the observation deck closed hurts the city's economy, saying the number of visitors to the Statue of Liberty had dropped sharply since the crown closed."The bureaucracy which had stubbornly refused to open the crown is finally moved in the right direction," Weiner said. " … America is one step closer to providing what everyone wants: safe access to the heights of Lady Liberty."The park service said in a statement that several architectural and engineering firms have assessed visitor access since the attacks, and all concluded the area from the pedestal to the crown doesn't meet safety codes.The newest park service survey, sent to nearly 800 security firms, asks them to prepare plans that address whether the statue can be updated to meet fire safety codes, and, if not, how the park service can minimize safety risks there.The plans could be finalized by January 2009, Weiner said. The House agreed to provide $1 million to help fund the work; it wasn't immediately clear if the Senate would do the same.The National Park Service said the staircase leading to the observation deck was installed for maintenance workers, not for sightseers. When it was open, rangers responded to emergencies almost daily, especially in summer heat.Sightseers suffered heat exhaustion, shortness of breath, panic attacks, claustrophobia and fear of heights, the park service said."The Statue's designer, Frederic Auguste Bartholdi, never intended visitors to ascend to the crown," Boch said.The crown is the only National Park Service site that hasn't reopened since the Sept. 11 attacks. The park service oversees such sites as the Washington Monument in Washington, D.C., and Mount Rushmore in South Dakota.A gift from France to the United States, the Statue of Liberty was dedicated in 1886. An inscription on the base, by poet Emma Lazarus, reads:
"Give me your tired, your poor,
Your huddled masses yearning to breathe free,
The wretched refuse of your teeming shore.
Send these, the homeless, tempest-tost to me, I lift my lamp beside the golden door!"

Inspiration and innovation take new form this summer with the arrival of one of the most highly anticipated exhibitions in years—The New York City Waterfalls—a monumental-scale public art installation conceived by the Danish/Icelandic artist Olafur Eliasson.

The project, commissioned by the Public Art Fund and presented in collaboration with the City, will be on display from June 26 through October 13, 2008. It features four 90- to 120-foot-tall waterfalls installed along the East River: one at Pier 35 in Manhattan, north of the Manhattan Bridge; one on the Brooklyn anchorage of the Brooklyn Bridge; one between Piers 4 and 5 in Brooklyn adjacent to the Brooklyn Heights Promenade; and one on the north shore of Governors Island. How It Works

When travelers arrive at any of these award winning destinations and register, they receive a gas card that has a $50 credit balance awaiting their use. GORDON BILL TO AUTHORIZE AQUARIUM AT XANADU APPROVED IN COMMITTEE
TRENTON – A bill sponsored by Senator Bob Gordon which would remove regulatory stumbling blocks to allow for the construction of an aquarium in the Xanadu complex at the Meadowlands was unanimously approved by the Senate Economic Growth Committee today.

“Allowing the developers of Xanadu to include an aquarium in their planning introduces an educational element to the facility,” said Senator Gordon, D-Bergen. “Aquariums are a fantastic opportunity for both children and adults to come face to face with some of the treasures of our planet’s oceans. A world-class aquarium at the heart of Xanadu would enhance the development’s regional profile and draw in visitors from around the New York City metropolitan area.”

The bill, S-1972, would remove a provision under current law prohibiting the construction of an aquarium at the Meadowlands. Under the bill, the New Jersey Sports and Exposition Authority (NJSEA) would be granted authority to enter into any private contracts or legal agreements to facilitate the construction of an aquarium on the Meadowlands site. The NJSEA has already received a proposal for a privately-financed aquarium at the Xanadu retail and entertainment complex, to be built without any public funding by Cumming Corp., the same developer working on the Xanadu project.

Senator Gordon noted that the original exception for an aquarium at the Meadowlands was intended to give the Adventure Aquarium in Camden a level of regional exclusivity, to ensure that the facility would attract visitors to the Camden waterfront. However, Senator Gordon argued that the distance between Camden and the Meadowlands is sufficient to support two facilities, and that the carve-out is contrary to the tenets of healthy competition.

“The Adventure Aquarium is one of the great success stories in New Jersey’s efforts to bring Camden back from the brink of fiscal collapse,” said Senator Gordon. “But I think that the current law prohibiting an aquarium in the Meadowlands is unnecessary, as the Meadowlands aquarium would draw in an entirely different visitor-base. New Jersey is big enough to support two top-notch aquariums, and we want to give the residents of North Jersey a taste of undersea adventure in their own backyard.”

The bill now heads to the full Senate for consideration.

An independent panel from a cross section of state associations judged the entries based on economic benefits, job creation, architectural merit and community involvement. Of the 28 projects entered, the judges selected 10 as co-winners of equal merit.

Trenton, NJ - New Jersey Republican State Committee Chairman Tom Wilson issued the following statement today:

“Rising gas prices are stressing the finances of New Jersey families and threatening our summer tourism industry. John McCain’s plan to suspend the gas tax from Memorial Day to Labor Day will result in an immediate eighteen cent reduction in prices and give our families some much needed help. Senator McCain’s proposal will help lower the cost of gas and diesel fuel. That means lower costs for drivers and also lower costs for food and other consumer goods that depend on trucks to get those products to stores.
Tourism is the second biggest industry in New Jersey and summer tourism depends on people getting in their car and driving to our beaches, parks and attractions. If it costs too much to get there, people won’t go and that will have a horrific ripple effect on a state economy that has been devastated by massive Democrat tax hikes. A summer gas tax holiday isn’t just good for families, it’s critical to the economy of New Jersey.
The Democrats who control Congress – Senator Lautenberg, Congressman Andrews among them – need to step up and make it clear that New Jersey’s economy is more important than presidential campaign politics. Senator Clinton has signaled a willingness to support John McCain’s proposal, while Senator Obama has flatly rejected it. Oddly, Senator Obama, citing the ‘huge hike” in gas prices in 2000, supported a gas tax holiday as an Illinois legislator. Now he’s playing politics instead of doing what’s right.
Our Democratic Senators and Congressmen need to make it clear whether they support John McCain’s call for much needed gas tax relief. All of them talk about tax relief for the middle class. The gas tax takes a big bite out of the paycheck of a middle class New Jersey family. John McCain’s gas tax holiday will provide real relief, real quick.”
